Cowboy Caviar (Greek-Style)

This easy Cowboy Caviar is a colorful dip made with a mix of black beans, black-eyed peas, fresh veggies, creamy avocado, fresh herbs, feta and a tangy lemony dressing.

  1. In a large mixing bowl, gently stir together the black beans, black-eyed peas, tomatoes, bell pepper, corn, red onion, jalapeno, olives, feta, parsley, and mint.
  2. Add the avocados and drizzle the lemon juice over them, then gently fold in.
  3. In a small bowl, whisk together the dressing ingredients: olive oil, red wine vinegar, sugar or honey, salt, pepper, oregano, and garlic powder.
  4. Pour the dressing over the beans and vegetables and toss gently to combine.
  5. Serve immediately, or cover and refrigerate for 30 minutes to let the flavors marinate. Serve with pita chips or tortilla chips.

Notes

Make-Ahead Tip

If preparing more than 30 minutes before serving, hold off on adding the avocado until just before you're ready to serve.

Using Dried Beans

To substitute dried beans for canned, soak about 1 heaping cup of dried black-eyed peas or black beans overnight, then drain and rinse. Boil in salted water and simmer, covered, until tender (about 45 minutes), then cool completely before using. This amount replaces the two 15 oz. cans of beans called for in the recipe.
