These whole-grain muffins don’t need added sugar to taste great thanks to fresh apple, raisins, and applesauce. They’re hearty and slightly chewy (similar to baked oatmeal).
3 cup(s) Uncooked old fashioned rolled oats divided
2 tsp Baking powder
1 tsp Ground cinnamon
½ tsp Table salt
⅔ cup(s) 1% low fat milk
⅔ cup(s) Unsweetened applesauce
2 large egg(s) Egg lightly beaten
¼ cup(s) Raisins
1 large Apple unpeeled and diced
Steps
Preheat the oven to 375°F. Line a 12-cup muffin pan with paper liners; coat the liners with cooking spray.
In a blender, blend 1 ⅔ cups of oats on high speed until a fine flour forms, 30 seconds to 1 minute. In a large bowl, whisk together the oat flour, remaining 1 ⅓ cups oats, baking powder, cinnamon, and salt. In a medium bowl, whisk together the milk, applesauce, and eggs. Add the milk mixture to the oats mixture; stir until well combined. Fold in the raisins and apples. Divide the batter evenly among the prepared muffin cups. Bake until a wooden pick inserted in the center comes out clean, 18 to 21 minutes.
