Lentils mimic Salisbury steak so beautifully in this vegan take on the classic dish. Smothered in mushroom gravy, it is so delicious, super easy, and filled with protein!

  1. Using either a potato masher or fork, mash the cooked lentils in a medium sized mixing bowl, until they are almost all mashed, leaving a bit of texture.
  2. Add to the bowl all the remaining ingredients except the olive oil. Stir together the wet and dry ingredients, then continue to mix using your hands until fully combined. Knead for a few minutes until it forms a nice dough ball that isn't sticky any more. (The longer you knead them, the firmer they will be.)
  3. Divide the dough evenly into six balls. Flatten each ball into the traditional oval Salisbury-steak shape.
  4. If you want a firmer steak, preheat the oven to 425 degrees. Put the steaks on a sheet pan coated with non-stick spray, and bake them for about 20-30 minutes or until the steaks are firm.
  5. Heat the olive in a cast iron skillet or non stick pan on medium high. Working in batches, fry the steaks on each side until brown and cooked through. If you baked the steaks first, this will only take a minute or so on each side. If you wanted a more tender steak, and didn't bake them first, this will take 2-3 minutes on each side.
  6. Remove the steaks from the pan, and set aside while you make the mushroom gravy (see related recipe).
  7. Either add the steaks back to the pan with the gravy and cook together for a minute, or put the steaks on a serving dish and cover with gravy. Serve with veggies and carbs.
